EASY Frozen Peanut Butter Pretzel Truffles Recipe: A MUST-TRY Summer Treat

And as the heatwave continues, we're all looking for ways to stay cool and enjoy quality time with our families. One fun and delicious way to do this is by trying out a recipe from the "Ice Tray Treats Book" (available at New Origin Shop, of course).

But enough of the sales pitch! Here's a sneak peek of one of the BEST AND EASIEST recipes you can find in the book:

Peanut Butter Pretzel Truffles

Ingredients:

  • 6 ounces dark chocolate, chopped, or 1 cup dark chocolate chips
  • 2 tablespoons coconut oil
  • 1/3 cup smooth peanut butter
  • 1 tablespoon confectioners' sugar
  • 1/2 cup finely crushed pretzels

Instructions:

  1. In a heatproof bowl, combine the chocolate and coconut oil. Melt the chocolate over a small pot of simmering water or in the microwave.

  2. Spoon two-thirds of the melted chocolate into a silicone ice tray, dividing evenly among 12 cubes. Tilt the tray so that the chocolate coats all 4 sides of each cube. Transfer to the freezer and chill for 10 minutes.

  3. Combine the peanut butter and confectioners' sugar in a medium bowl. Stir until well combined. Add the crushed pretzels and stir again.

  4. Remove the ice tray from the freezer. Spoon about 1 tablespoon of the filling into each cube and gently press down on it with your fingers.

  5. Spoon the remaining chocolate on top of the peanut butter filling, dispersing evenly. Transfer to the freezer for another 30 minutes until completely solid.

  6. Store in the refrigerator until ready to serve.
